Kale Salad

This power packed salad will fill you up, without weighing you down. Ever notice how some meals give you energy, while others leave you feeling slowed down or even tired? 

Kale is a superfood that contains more iron than beef, more calcium than milk, and also helps reduce the risk of heart disease & cancer. Rich in nutrients, kale will help boost your natural energy. The simple dressing is what my Mom made for our salads growing up & what her Mom taught her how to make. Just oil, vinegar, fresh garlic & red onion. All stuff we can name! 

Back then, they didn't have nearly as many processed foods or dressings so readily available. Ever hear that saying, "Don't eat anything your grandmother wouldn't recognize as food"?  I'm happy to share with you a recipe passed down through my family, from my own grandmother. Aloha!

  • 1 bunch of Otsuji Farm kale chopped 
  • 1 small mango cubed
  • 1 tomato diced 
  • 1/2 cup walnuts 
  • 2-3 oz Naked Cow Dairy Farm feta
  • Fresh ground pepper 


  • 1 cup olive oil
  • 1/4 cup balsamic vinegar (my Mom uses red wine vinegar) 
  • 1/4-1/2 red onion rough chopped 
  • 4 garlic cloves 
  • Fresh Italian parsley chopped (I added this to my Mom's recipe) 
  • Fresh ground salt/pepper to taste

Cooking Process:

Combine all ingredients in a food processor & blend for 30 seconds-1 min. Save the rest for later or use as a marinade on chicken! 

*If you don't have a food processor, just do what my Mom does. Mince up your garlic, chop up your onion then whisk with oil/vinegar and a fork. Use a small ladle to spoon dressing over salad.
