Blackened Ahi w/Fresh Blackberry Puree
This dish is all about fresh.... fresh ahi, fresh blackberries and fresh farmer's market vegetables.
- 1 ahi tuna steak
- 1/2 cup brown sugar
- 1/4 cup cajun seasoning
- 1/2 pint blackberries
- coconut oil
- fresh ground pepper
Farmer's Market Vegetables
- red, yellow and green cherry tomatos
- 1/2 yellow bell pepper diced
In a food processor or blender mix blackberries and 1/4 cup of brown sugar until it's pureed. Set aside in a squeeze bottle or zip lock bag to use as garnish later on.
*When ready to drizzle on top of ahi, simply cut the tip off one of the corners of a zip lock bag if you don't have a squeeze bottle or pastry bag.
In a small bowl mix remaining brown sugar, cajun seasoning & fresh ground black pepper. This is your ahi seasoning. Brush your ahi tuna steak with coconut oil, then rub/coat with seasoning.
Setup two pans on your stove top.
One will be to flash sear the ahi, the other will be to saute your farmer's market vegetables. Set your first pan to medium heat, saute vegetables in coconut oil and season with salt and pepper. Put 2 tablespoons of coconut oil in the second pan and let heat up on a high flame. For a rare ahi, sear each side for 5-8 seconds, quickly flipping with tongs and removing from pan. Immediately transfer to chilled plate. The heat from the sear will continue to cook the fish if you put it on a cutting board or plate that is room temp. Serve your ahi over the sauteed vegetables and drizzle with back berry puree.
