4 tablespoons miso

2 tablespoons sugar

4 tablespoons mirin

1-2 lbs chicken thighs

Cooking Process:

Immerse wooden skewers in water.  Mix ingredients in bowl.  If you want extra sauce for dipping, double the recipe.  Cut the chicken into cubes and lightly flatten/tenderize with a heavy glass or mallet.  Put 3 or 4 pieces on  wooden skewers.  Cook for 3-5 minutes on each side basting while its cooking.
