BBQ Chicken Tacos w/Pineapple Mango Salsa

BBQ Chicken

  • ½ cup unsalted ketchup
  • 1 tbs mustard
  • 1 tbs Royal Hawaiian Honey
  • 2 tbs water
  • ¾ tsp ancho chile powder
  • ¾ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground cumin
  • ½ tsp Worcestershire sauce
  • 1/8 tsp kosher salt
  • 3 cups shredded skinless, boneless chicken breast
  • Corn tortillas

Pineapple Mango Salsa

  • 1 pineapple
  • 1 mango
  • 1 small red onion
  • 1 jalapeno
  • Small bunch of cilantro
  • 1 lime
  • Kosher salt

Cooking Process:

1. Combine first 11 ingredients in a saucepan. Bring to a

simmer; cook 10 minutes. Combine sauce and chicken. continue cooking until tender.  Shred chicken and set aside. 


Pineapple Mango Salsa

Cut off the top and bottom of pineapple.  Carve off five equal sides to remove the skin.  Slice the pineapple into long wedges from top to bottom, then slice off the hard inner core of each wedge.  Lay the wedges on the cutting board, and make long slices.  Then cut each slice in half so that you have long matchsticks of pineapple.  Grab a bunch, rotate them ninety degrees, and slice in the opposite direction to create a fine dice.  Repeat with the rest of the pineapple and set it aside in a big pile.

Cut the two “cheeks” off the mango.  Use a small, sharp knife to cut a grid in each piece.  Invert the piece to force the squares apart.  Then just use the knife to cut off each little square of mango.  (You will have a lot more pineapple than mango.  If you prefer a larger mango-to-pineapple ratio, use two mangos) Small dice the red onion. Small dice the jalapeno.  If you want less heat, remove the membrane and seeds before dicing.Chop cilantro. Slice lime in half. Throw all chopped ingredients into a bowl. Squeeze lime juice over ingredients, sprinkle salt, and combine.
