Carissa Moore & Pappa Fred Lums Green Onion Sauce Salmon Poke

World champion Surfer Carissa Moore and her Pappa Fred Lum made one of my favorite recipes this season. Yes I said this season. I think the simplicity of it and the flavors in it make it pretty amazing.


The oils in the salmon in addition to the oil in the recipe really bring out the flavors of the salmon. Be sure to watch the recipe closely now you don’t just us any oil and it’s important to use the white stalk part of the green onion.


Carissa told me that this is her favorite dish from her pappa and now it is mine. Mahalo Pappa Fred Lum and Carissa for sharing this recipe.  I have made it twice since you taught me and I plan on keeping this one around for a long time!

Ingredients: Print   Add to cart
US Metric

Green Onion Ginger Sauce
1 part Ajinomoto
3 parts Hawaiian Salt
20 parts grated Ginger Root
40 parts Green Onion
Canola Oil, enough to cover mixture


Salmon Poke
1 lb. salmon, cubed
1/2 cup green onion ginger sauce

Cooking Process:

Cut Green Onion fine. Do not chop. (Use only white part of stem of green onion). Use Gourmet Micro plane grater to grate ginger root. Weigh cut green onion. Add measured Hawaiian Salt and Ajinomoto to the Green Onion and mix well. Add the measured grated ginger root to the mix. Add enough canola oil to cover the mixture.


Salmon Poke
Add cubed salmon to mixing bowl. Add green onion ginger sauce. Mix well and refrigerate until ready to eat. Serve ice cold.
