Seared Ahi with Mango Salsa
1/2 Mango, peeled and cut into cubes
1/4 pound ahi 
2-3 tablespoons cooking oil to sear ahi
salt and pepper to  taste
1 tablespoon Aloha shoyu
1 piece ginger, shredded
1/4 Onion, chopped
champagne vinegar to taste (1 -2 tablespoons) 
1 sliver green onion, cut in half
salt and pepper to taste
1/4 lime, squeezed

Cooking Process:
Add chopped mango, green onion, onion and ginger to a bowl.  Season with salt, pepper, vinegar, lime juice and Aloha Shoyu.  Set aside in refrigerator and chill until ready  to use.
In a  pan, heat oil over medium high heat.  Season ahi with salt and pepper.  Once pan is extremely hot, sear ahi for about 1-2 minutes on each side.  Once cooked, remove ahi from heat and allow to sit for 1 minute. Slice thinly across the grain or serve whole, finish with sesame seeds and garnish with mango salsa.
