TIN ROOFs SHELDON SIMEONs BOTTOM OF THE PLATE LUNCH RECIPE

o 1 Head Cabbage, shaved
o Mac Salad Puree
o 1 cup Macaroni, overcooked
o 1 Egg, Hard Boiled
o 1 cup Mayonnaise, Best Food
o 1 tsp Sherry Vinegar
o Garlic Salt, to taste
o Black Pepper, to taste
o 3 tbsp Beef Tallow
o 1/2 cup Aloha Shoyu
o 1/2 cup Sugar
o 1 tbsp Sesame Oil
o 1 tsp Sambal
o 1 tsp Ginger, minced
o 2 cloves Garlic, minced
o 2 stalks Green Onion, fine chopped
o 1 tbsp Toasted Sesame Seed, in sesame grinder
Using a mandolin shave cabbage as thin as possible. For Mac Salad Puree, place all ingredients into a vitamix blender, blend until smooth. Transfer to squeeze Bottle.
Place all ingredients for sauce into sauce pot. bring to hard simmer over medium high heat.
Place a pile of cabbage on serving platter. Drizzle mac salad puree over cabbage.
Season cabbage with toasted sesame seeds. Transfer sauce to a sauce pourer. Pour sauce over cabbage tableside.
