CHILI MANGO SAUCE
A very common island sauce to go along side grilled shrimp, chicken or fish. There are many versions of this recipe. This Chili Manog Sauce is one of my favorites. Very simple, very clean flavors.
- ¼ c. peanut oil
- ¼ c. Thai chili garlic paste
- 1 T fresh ginger, grated
- 1 clove garlic
- 2 T each mirin sake
- 2 TB fresh lemon juice
- Pinch salt, freshly ground black pepper
- 1 c. ripe mango, chopped
In a blender, combine all ingredients except mango. Process until smooth.
For service: Stir in mangoes. Makes 1 ½ cups. Serve along side grilled shrimp, chicken or fish. Serves 3-4.
