PINEAPPLE COCONUT PIE
An old school, passed around recipe. I can’t remember, but I think I have had this Pineapple Coconut Pie recipe for over ….well, it’s an island favorite. Simple island flavors and easy to prepare.
9-inch pie shell ¼ c. butter, melted, browned 3 large eggs, beaten 1 c. sugar 1 (8 oz.) can crushed pineapple, drained 1 c. milk 1 c. flaked coconut 1 TB all-purpose flour pinch salt Garnish: nutmeg
Preheat oven to 350 degrees. In a mixing bowl, combine all ingredients well. Pour mixture into pie shell. Sprinkle nutmeg over top. Bake 30 minutes until set.
