COCONUT JASMINE RICE
A great side dish to go along with any Thai or Vietnamese dish. Full of the familiar flavors of coconut, chile and ginger combined with jasmine rice.
1 ½ c. jasmine rice, washed ¾ c. water ¾ c. coconut milk 1 jalapeno pepper, chopped 1 tsp. ginger, peeled, grated 1 tsp. Thai fried garlic ½ tsp. salt Garnish: ¼ c. chopped green onion, juice of 1 lime, ¼ c. chopped peanuts
In a rice cooker; combine all ingredients; cook as directed. Garnish as desired.
