Watercress Goma Ae (Sesame Sauce)

A great and flavorful Asian way to serve up vegetables; usually watercress or spinach. This recipe works well with bean sprouts and mizuna as well. Often times found in bento box lunches as a side dish.

1 medium bunch watercress; blanched in salted water, 1 ½-2-inch lengths
4 TB sesame seeds, toasted
½ TB raw sugar
½ TB miso paste
½-1 TB mirin, as desired
½-1 TB Aloha shoyu, as desired

Cooking Process:

In a suribachi or with a mortar and pestle; grind sesame seeds until fine. Add sugar, miso, mirin and soy sauce. Mix well. Taste for seasoning, add mirin and soy sauce as needed. Toss watercress with sesame mixture. Good on blanched spinach, green beans, mustard cabbage, choi sum, bean sprouts or mizuna. Serves 3-4.
