Chicken Broccoli Ramen Salad

A great pot luck salad dish. Take the time to toast the ramen/saimin noodles as this adds a wonderfully flavorful crunch to your salad. A great way to use up that rotisserie chicken.

1-2 pkg. dried ramen/saimin, broken into pieces
½ -1 pkt. ramen/saimin soup base seasoning
1 c. macadamia nuts, chopped
2 TB butter
3 small heads Romaine lettuce, chopped
2 c. broccoli florets
1 c. broccoli stems, thinly sliced
1 ½ lbs. cooked chicken, shredded (optional)
1 can (11 ounces) mandarin oranges, drained (optional)
1 c. vegetable oil
½ c. sugar
½ c. honey
½ c. red wine vinegar
3 TB Aloha shoyu
Salt and freshly ground black pepper to taste
Pinch red pepper flakes

Cooking Process:

Preheat oven to 400 degrees. In a large baking pan, combine noodles with seasoning mix and nuts. Dot with butter. Bake 9-12 minutes; stirring mixture every 3 minutes until slightly brown. Do not over brown. Cool; set aside. In a large bowl, toss together lettuce, broccoli florets, stems, optional chicken and mandarin oranges; set aside. In a mixing bowl; whisk together dressing ingredients.

how to serve:

For service: Toss lettuce mixture with dressing. Reserve dressing to be served on the side. Top with toasted ramen and nut mixture. Makes 12 servings.
