Papaya Marmalade

A great way to use up overripe papayas. This sweet and flavorful marmalade is the perfect thing for your morning toasted bagels. Mix with some mustard and mayonnaise for a great ham sandwich spread.

5 c. ripe papaya, peeled, chopped
½ c. pineapple, chopped
1 orange, zest
¼ c. lemon juice
1 TB ginger, peeled, grated
5 c. sugar
½ t. salt

Cooking Process:

In a saucepan over medium heat; combine all ingredients. Bring to a boil. Reduce heat; simmer 20 minutes, stirring frequently to prevent burning. Mixture should be glossy and thicken. Yield: 2 pints.
