Cilantro Lime Rice

I am a uber Chipotle fan. Mainly because we are not fortunate enough to have any in Hawaii. So, it is a go to place for us whenever we are away from home. This is my take on their delicious cilantro lime basmati rice that fills their burritos.

US Metric

1 TB vegetable oil
1 TB butter
1 small onion, finely chopped
1 clove garlic, minced
1 green jalapeno pepper, seeded, minced
¼ c. cilantro stems, minced
1 c. long grain or basmati white or brown rice
½ tsp. salt
1 tsp. ground cumin
2 c. chicken broth
½ c. cilantro, chopped
2 limes, juiced
1 lime, zest

Cooking Process:

In a saucepan over medium heat; sauté onion in oil and butter. Add garlic, jalapeno pepper and cilantro stems; sauté 1 minute. Stir in rice; until well coated and translucent; about 2 minutes. Add salt and chicken broth; stirring. Reduce heat to low; cover and simmer 20 minutes. Remove from heat; let sit 5 minutes. Fluff with a fork; adding cilantro, lime juice and lime zest.

Serve immediately. Serves 2-3.
