Sinangag (Garlic Fried Rice)

You can always count on me ordering Pork Adobo Fried Rice Omelet whenever I go to a Filipino Restaurant. It is one of those must have dishes. Well, a variation of this recipe has transformed me.


A typical dish found on all Filipino Restaurant menus. This simple Sinangag rice dish is flavored with fried garlic and I like to add patis and soy sauce.

6 cloves garlic, crushed
6 cloves garlic, minced
3 stalks green onion, chopped, white parts only
vegetable oil, as needed
1 TB fish sauce
2 tsp. Aloha shoyu
Freshly ground black pepper, as needed
3 c. cooked rice, day old, cooled
garnish: 3 stalks green onion, chopped, green parts only

Cooking Process:

In large nonstick skillet over medium heat, saute garlic in 1 TB of oil until fragrant and lightly browned. Add fish sauce to pan and cook, stirring, until no liquid remains. Add white parts of green onion, rice, soy sauce and pepper. Toss rice well, Cook until rice has a slightly crunchy bottom. Toss rice well. Optional to add meat items as desired (bacon, tocino, sausage, corned beef, fried fish). Serves 3-4.
