Black Bean Salmon Fillets

Try this Black Bean Salmon Fillets recipe. A take on a “special of the day” dish  recently enjoyed at a new Chinese Restaurant specializing in seafood. Intrigued to see salmon on the menu, we had to try it. Served over crisp tender vegetables, this makes for a full meal.

Black Bean Salmon Fillets

4 (4-6 oz.) salmon fillets, skinless,

½ small bunch asparagus, trimmed

1 c. broccoli florets

Water for steaming

Garnish: cilantro leaves


1 tsp. Chinese 5 spice
pinch white pepper

2 TB sake

1 tsp. sesame oil
½ -inch fresh ginger, peeled, thinly sliced

2 TB vegetable oil
2 TB ginger, minced
1 clove garlic, minced
2 TB salted beans, rinsed, drained
¼c. dry sherry
2 TB Aloha shoyu
1 TB oyster sauce
1 TB honey
1 1/2 c. chicken broth
2 TB cornstarchmixed with ¼c. water

Cooking Process:

Place salmon in a shallow dish with 5 spice, pepper, sake and ginger. Marinate 10-15 minutes. In a steamer over medium high heat; steam asparagus and broccoli until crisp tender. Drain and set aside. Remove salmon from marinade. In a skillet over medium heat; sauté fish in oil. Remove and keep warm. Into skillet; stir fry ginger and garlic 30 seconds. Add remaining ingredients. Bring to boil. Reduce heat; simmer 15 minutes. Stir in cornstarch slurry until thickened. Remove from heat. For service. Place steamed vegetables onto serving platter; top with salmon. Pour sauce over salmon; garnish with cilantro. Serve immediately. Serves 4.
