Pumpkin Spice Bread

3 large eggs

3 c. sugar

1 c. vegetable oil

2 c. pumpkin (or one, 15-ounce can)

2/3 c. water

3 c. all purpose flour

2 tsp. baking soda

1 ½ tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

½ tsp. baking powder

½ tsp. all spice

½ tsp. ground cloves

Cooking Process:

Preheat oven to 350 degrees. Grease and flour two 9-inch loaf pans. In a large mixing bowl; combine dry ingredients. In a separate bowl; combine eggs, sugar and oil. Stir in pumpkin and water. Make a well in the center of flour mixture; add pumpkin mixture. Stir just until moistened. Pour batter into prepared pans. Bake 60-70 minutes, or until a cake tester inserted in center comes out clean. Cool 10 minutes before removing from pan. Makes 2 loaves.
